Peach Blueberry Biscuit Cobbler


This delicious cobbler recipe combines a sweet fruit filling with a fluffy golden brown biscuit on top.  Whether served warm with a scoop of vanilla ice cream or cold straight out of the fridge, this delectable dessert is sure to please.


Ingredients:
  • 3-4 fresh peaches peeled and cut into thin slices
  • 1 c. fresh blueberries
  • 1 c. sugar
  • 1 tbsp. cornstarch
  • 1 c. water
  • cinnamon
  • brown sugar
  • 2 1/4 c. Bisquick baking mix
  • 2/3 c. milk
  (I used Bisquick baking mix to simplify matters, or you can make biscuits from scratch.)



Begin by washing, peeling and cutting your peaches into thin slices.  For filling, combine sugar and cornstarch in a large saucepan.  Stir in water gradually and add fruits.  Bring to boil 1 minute, stirring constantly. 
 Pour into an 8"x11.5"x2" baking pan; sprinkle with cinnamon.
 For biscuits combine Bisquick baking mix and milk in a large bowl and stir until thick dough forms. 
 Drop by spoonfuls onto filling (and if desired and possible, smooth around dough.)  Spread 1 tbsp. melted butter onto dough, and sprinkle with brown sugar.  Bake at 400 degrees for 20-25 minutes or until biscuits are golden brown.



Enjoy plain or with a scoop of vanilla ice cream!
